I type this as I just finished doing my morning workout. Which today included 10 lunges ( each leg ) while holding 5 pound dumbbells, 60 jumping jacks and a set of bicep curls, overhead triceps press and standing chest fly. So as you can imagine I am a little sore not to mention I still need to walk my most amazing little Pug named Meeko she is my pride and joy.
So to make me feel great after my workout I decided to remake a smoothie that my wonderful friend Tabitha came up with. She calls me into her office yesterday and says I need you to try this smoothie I just threw together ,she says I can’t quite place the flavor. So I drink it knowing it is not Paleo…which is ok, and my taste buds starting dancing around as if they are on cloud 9! It tasted just like fried ice-cream! If you have never had fried ice-cream I suggest you run now to your closet Mexican restaurant and demand some! So I look at her wide eyed and say “Oh my goodness its fried ice-cream” she was a shocked as me because she agreed that was it. I just couldn’t get it out of my head and wanted to try and make it Paleo approved. Well I am getting pretty good at figuring this stuff out if I may toot my own horn (toot toot).
Here is the Non-Paleo version:
1/2 of a ripe mango
She didn’t measure but advised it was a dash of this and that.
Paleo “Fried Ice-cream”
1/2 cup Full fat coconut milk ( to give it the creamy consistency)
1/3 cup almond yogurt (made with almond milk)
dash of vanilla extract
a few dashes of cinamon
1/2 ripe mango
Blend and enjoy, then come back and tell me how I changed your life 🙂
