The Whole 30 Challenge Day 3

It is just getting easier and easier and I am saying that on my 3rd day so that shows you something. Today was another long 12 hour work day. Don’t get me wrong I love my job and what I do. I am a 911 Dispatcher and no the stories on TV are not nearly as bad as they make them out to be.Those 12 hour shifts on the other hand can be very tough some days. Especially today I swear to you there was a full moons somewhere effecting the people who were calling in. It seemed like the 12 hours dragged on and on. Luckily today is Friday and it is my weekend off! Yay!!  Any-who on today’s menu was a chocolate mango smoothie, 3 slices of bacon, an apple and a banana again. Those items are just easy to eat at my desk. Lunch was leftover turkey burger with tossed greens, kalamata olives and cheddar almond cheese. For dinner I am firing up my trusty grill and throwing on a marinated flank steak having a sweet potato and a side of sauteed kale and more then likely a glass of red wine 🙂

For the Kale:

Need:

Cast Iron Skillet

Bacon Grease

Salt

Olive oil

Kale

Heat up the bacon grease on medium heat and throw in your kale drizzle some olive oil on top and saute. When almost done sprinkle some salt on top give the kale a nice toss around and your done. VOILA! ( or as my friend from the blog “A Life Reconstructed” would say “Viola” hehe)

See previous recipe for the flank steak and as far as the sweet potato went I turned oven on 400 and cooked for about 20-30 minutes, it was a small one anyway.
