Whole 30 Challenge Day 14 *Two weeks!*

TWO WEEKS!! This really is a lot easier then it looks you’re eating food that is good for your mind, body, and soul! I want to express how amazing it is to wake up feeling refreshed and not exhausted because I didn’t get enough sleep. I don’t have that sleep hangover feeling. I wake up when  my body wants to wake up, even on work mornings when I have to be up at 5! How crazy is that? On my days off I sleep till around 0730/800 ish but even then I wake up refreshed. I don’t need coffee anymore to get me going…I do know that would be a shock to a lot of people to no longer need their morning cup of coffee. I am also working out a lot and getting energy from that. I was honestly skeptical when I first discovered the “Paleo” lifestyle. I thought I could never give up dairy, I NEED that half & half in my coffee every morning, I love cheese I am addicted to cheese! What do you mean I can’t have sugar….so that means no more Reese’s Peanut Butter Cups? No alcohol of any kind not even wine. What I am getting myself into? I admit I could do without the alcohol, but having a glass of wine to wind down in the company of good friends is a staple in my life. So I continued to read up on it and started reading how it literally changed  peoples lives. Such as curing ailments they have lived with their entire life, cured allergies; that is a big one for me; cleared up acne and so many more amazing things. Not to mention the weight loss that comes along with eating better and exercising. I figured this was  going to be hard and so expensive. How do I give up what I have been doing my whole life? The answer was very simple, I was finally ready to change I was tired of feeling tired and groggy and cranky all of time. I was tired of my allergies always getting in the way and having to take medications for them. I also wasn’t very happy with what I was seeing in the mirror, I have  battled my body issues since I was a child. I have done so many “crash”‘ diets and they worked for a little while then the weight “mysteriously” creeped its way back to me. It is very easy to gain weight but very hard to loose it. I never really understood that, maybe because I never really gave it my all. I had finally hit rock bottom and decided this is it. This time I will succeed and I honestly feel like I have. I have a few people who don’t understand why I have  made the change to live this way. A few people say it’s taking it to the extreme, but I don’t really care what they say because they will remain the same until the day comes that they want to change. I am not doing this for them I am doing it for me! I am thankful to the people in  my life who are encouraging me and being my “cheerleaders” along the way. I have a lot to be thankful for and I see that now.

I like to start my days off with my workouts, I am on Level One of the set of exercises I have been following. Today was 85 jumping jacks and 20 leg lifts. The jumping jacks are easy…kind of, but the leg lifts they are HORRIBLE! I thought I would never get past doing 5 in a row and they get higher day by day. Yesterday I was able to do all 15 without stopping. Today I got to 13 and had to take a break but darn if I didn’t continue and do all 20 of them! I feel so accomplished when I finish working out.  It really is key to workout in the morning time because you continue to burn calories and fat throughout the day. After my in house workout I took my pug Meeko for a 30 minute walk around our neighborhood. It was  75 degrees and windy it felt amazing.  Once back I whipped up a Chocolate Cherry Kiss Frap. and fell in love with the coffee again.

Chocolate Cherry Frap

1/2 cup of iced chocolate cherry kiss coffee

1/4 cup almond milk

1 tsp cocao nibs

1 scoop vanilla protein powder

4 ice cubes

Blend and enjoy.

It tasted like a chocolate cherry explosion in my mouth. I love chocolate covered cherries A LOT!

For lunch I will be sauteing some yellow summer squash in my cast iron skillet and having my other chicken filet mignon.


I have will be having a nice glass of iced green tea on the side as well. I feel super accomplished today I was able to mark a few items off of my to do list. One of them being get organized! I am forever making my meal plan on the go, usually the same day I decide to go shopping. So I looked on Pinterest some meal planning templates, went to the store and finally  bought ink for my printer, new pens and a binder! I also bought some fruit and mason jars so I can start making some fruit water, because lets face it drinking water is kind of hard sometimes when all you are used to drinking is sodas. I cut out sodas a very long time ago, but I drink a lot of green tea. So to counteract my need for flavor I am going to start experimenting with different combinations of fruit and water.

Pictured above is Strawberry, blackberry and basil as well as Strawberry Basil. Currently they are in the fridge so they can release all of their flavor. I have so many ideas swimming around in my head and I can’t wait to share them with all of you.

I decided to make Mozzarella-stuffed Burgers for dinner. Using Paleo approved Mozzarella cheese, it is made from almond milk and still taste like regular cheese. I will be wrapping them up in lettuce wraps instead of a bun. For my side dish it will be steamed squash.


What you’ll need:


1 pound ground beef (grass fed)

1/2 cup mozzarella cheese

1 egg

smoked paprika- to taste



1 head of lettuce

1 large onion

1 tbls almond flour

1 tbls bacon grease or fat of choice

Saute the onion. Mix ground beef, egg, flour, salt, pepper and paprika in a large bowl. Form four patties, then place mozzarella in middle, form four more patties and clamp together. Place in fridge for 30 minutes. Get a pan nice in hot with your fat of choice and cook first side for 5 minutes then flip over and cook another 4 minutes.  Once done lay your lettuce on plate crisscrossing it on plate. Place onions on top then burger. Wrap and flip over to enjoy.

This will be my go to burger from now on! It was to die for!!!!
