Whole 30 Challenge Day 15


Mango Pineapple Smoothie

2 fresh pineapple stalks

1/2 cup frozen mango

1/2 cup almond milk ( I usually add more until it blends all together)

1 scoop of protein powder

Mango Smoothie

This was my yummy breakfast after my intense morning work out. I did 90 jumping jacks, 25 left lifts ( I thought I was going to die) 20 bicep curls, 30 over head triceps presses and 15 standing chest flies followed up by a 1 mile walk. My body was craving some time of refueling by the time I got home. As well as some air conditioning, it is super humid outside today. I had another great night of sleep, if I don’t take anything else away from the 30 day challenge at least I will have gotten plenty of sleep.

For lunch I will be cooking up more of my mozzarella stuffed burgers. I just couldn’t get enough of them! Just in case you forgot what they looked like here ya go:

Mozzarella Stuffed Burgers

Dinner will be Ropa Vieja and mashed cauliflower.

Chicken Ropa Vieja:

3 large chicken breast
1 1/2 cup chicken broth ( I prefer homemade, but I ran out so I had to use a carton one)
1 can of hunts diced garlic oregano tomatoes
1 small onion, thinly sliced and sauted
3 tomato, quartered
4 cloves garlic, peeled
1 tbsp olive oil
1 small green bell pepper, seeded and thinly sliced
1 small red bell pepper, seeded and thinly sliced
1 small yellow bell pepper, seeded and thinkly sliced
1/2 cup tomato sauce
garlic powder
salt and pepper to taste

Place chicken, onion, tomato, peppers, tomato sauce,  and 2 cloves of garlic into crock pot. Add broth to cover, and set to high for 4 hours until the chicken is tender. Remove chicken, ,shred and place back into serving dish. Best served over rice or over riced cauliflower.

Chicken Ropa Vieja

Mashed Cauliflower (Non-Paleo version)

2 heads cauliflower
1 can chicken broth
4 cloves of garlic
1 small sweet onion, sauteed
2 tbls butter flavored olive oil
1/2 cup sour cream or sub it out with Greek yogurt ( I have tried it both ways and you can’t tell the difference.
 shredded Parmesan cheese to taste

Boil cauliflower in chicken broth until tender, drain. In the meantime saute your onion in butter flavored olive oil, and dice up your garlic. Should take any where from 20-30 minutes depending on size of cauliflower and how fast your onions cook. Drain the cauliflower and place back in large  pot. Add garlic and onions, using an immersion blender blend until everything is mashed. Then add in sour cream  or Greek yogurt blend again. Lastly add in your cheese and stir to  mix.

* I prefer to add everything into a blender or food processor. Be very careful if using blender/food processor because the cauliflower will be very hot and steamy.*

When I make this recipe I cut everything in half, except the garlic because lets face it you really can’t every have to much garlic. (OK maybe you can, but take my word for it you won’t be overwhelmed with garlic here) Plus this a great alternative to mashed potatoes and you really can’t tell to much of a difference.

**I omitted the sour cream when I made mine and it still turned out great. I also used almond shredded mozzarella cheese **
