Whole 30 Challenge Day 22



Today at work just dragged on for eternity! Well as promised I have a very special smoothie recipe to share. Lets face it folks who doesn’t love a  warm ooey gooey fresh out of the oven warms you heart cinnamon roll? Do I have your drooling on your key board yet? HUH HUH? Well do I have a surprise for for you…cinnamon roll please (insert drum roll)

Cinnamon Roll Smoothie

1 cup almond milk

2 drops of vanilla extract ( real vanilla would be better)

a good dash of cinnamon

1 giant tbls of almond butter

1 scoop protein powder

That is all folks! How simply amazing is that? It was nice and thick and smelled and tasted amazing without all of the guilt!

Cinnamon Roll


For lunch I had 1/2 a sweet potato and a piece of chicken.

Jalapeno Glazed Chicken


4 skinless and boneless chicken breast
4 jalapenos (chopped)
1 medium pitted and sliced green bell pepper
1 medium pitted and sliced yellow bell pepper
2 teaspoons fresh chopped parsley
2 teaspoons chili powder
1 teaspoon thyme
1 teaspoon ground cumin
2 teaspoon sea salt to taste
1 teaspoon black pepper
2 tablespoons raw honey
Juice 2 fresh limes

1 cup chicken broth

Step 1

Preheat oven 450 degrees F

Step 2

Small bowl mix chili powder, cumin, thyme, sea salt and black pepper. Rub chicken breasts with spice mixture. (optional continue cooking chicken breast or arrange on baking sheet, cover and refrigerate for 1.5 to 2 hours)

Step 3

Medium saucepan combine chicken broth, honey, lime juice, sliced jalapenos, parley, slice green and yellow bell peppers. Cook at medium high heat until mixture thickens and vegetable soften.

Step 4

Arranged seasoned chicken breast on baking sheet. Place in preheat oven and cook for approximately 15 minutes. Baste chicken with marinated mixture cook additional for 45 minutes until chicken thoroughly cooked.
