Bleu Cheese Mozzarella Stuffed Burgers on a bed of Caramelized Onions

 What you need:

1 pound of ground beef
1/3 cup crumbled bleu cheese
1 egg
1-2 tsp salt
1 tsp smoked paprika
pepper to taste
1/3 cup shredded mozzarella

1-2 large sweet onions per burger (I love caramelized onions so I like a lot on my plate)

To make the burgers, combine the beef mince, egg, salt, smoked paprika, bleu cheese and pepper in a large bowl and mix well.

Divide the mixture into 8 even-sized patties, place 1/4 of the mozzarella in the middle of the patty and top with another patty. Crimp the edges of the two patties together to seal the cheese inside.

Place the patties on a greased tray and place in the fridge to chill for 30 minutes.

When the patties have been chilled, fry in a hot frying pan for 4-5 minutes per side depending on the thickness. I did 6 minutes on the first side and 5 when flipped.

Serve the patties on caramelized onions, or on a bun of your choosing.
