Chicken and Seafood Curry


1 can of coconut milk

2 cups of chicken broth; preferably homemade but not required

1 1/2 tablespoons of red curry paste

15 shrimp

15-20 mussels

1 1/2 links of fresh chorizo; chopped and sauteed

2 chicken breast; chopped up and sauteed in chorizo grease

2 tbls of olive oil

2 tsp of coconut sugar or palm sugar

1/4 tsp fish sauce

1 whole sweet onion; sauteed in olive oil

big pot to cook in

Chicken and seafood curry


Saute onion till they are nice and brown and translucent. In a separate pan start sauteing your chorizo. Set chorizo and onions off to the side, I combined them in same pan. Meanwhile chop up your chicken and toss around till golden and pan sauteed in the same pan you have cooked your chorizo in. I tossed the chicken, chorizo and onions together and set aside. Then put 1 tablespoon of oil in pan with the curry paste and stir around till fragrant. Once you start to smell the curry paste combine all the above ingredients. Add the coconut milk and chicken broth bring to a rolling boil and let cook down for about an hour. Right before you add the shrimp and mussels add in your sugar and fish sauce and stir.  Bring your curry back to a boil and add in your mussels and shrimp and cook till shrimp are pink about 5-6 minutes. I ate mine as a kind of soup even though curry is usually served over rice.

  1. Looks good, but since it is Sunday I will read it all later. I think the boys are to go home on Tuesday or Wednesday. Benjamin is coming to see us this afternoon after he goes to church. Haven’t seen him in a long time. I am sure the boys will be glad to see him as that is part of home for them.. He is always there on the week end. We would love to have you drop by.. Love Mawmaw

  2. When I visited my brother in Texas he took me to eat at a mans house that was retired and built an outdoor pizza oven. He began inviting people over to eat and the crowds grew until he could no longer afford to feed them all so began charging to cover expenses. Well he is now a very popular place to eat and he is making a great living from his house. Looking at your food on your blog makes me think that with these great recipes and your passion you could be as good or better at feeding people as that guy in Texas. It would be funny if you did end up earning a living doing what you love.
