Some of my favorite things in this world are chocolate and coconut. That is why I can’t get enough of those amazing little candies called Mounds, I also love the Almond Joy ones too. I anticipate I will be playing around and making an Almond Joy Frap soon, so stand by for that. Well after a nice long walk with my favorite girl, Meeko.
I decided I needed something to cool me down. I made a pot of coffee before leaving for walk and left it to sit on stove to cool. I was wanting something besides my normal cup of iced coffee. That is when the little mouse inside my head took a break and in walked my inner chocoholic. She was walking around waving her wooden spoon at me so what else was I to do but satisfy her? So I looked at what I had on my shelves and in the pantry. I recently bought some Madagascar Vanilla Bean paste *winner*. As I was saying I really wanted something cold and chocolaty. So I came up with this Coconut Frappuccino.
1 cup of ice
1/2 cup almond milk
1 cup iced coffee
1 tsp coco powder
1/8 tsp vanilla paste or extract
1/8 coconut extract
1 packet of stevia or 1 tsp of your sweetener of choice
Blend it all up and enjoy. You could even top this off with some shredded toasted coconut.
