Bacon and Bleu Stuffed Butternut Squash

2 small or 1 large butternut squash

1 tbls coconut oil

1 tbs maple syrup

3 tbls crumbled bleu cheese

3 tbls crumbled feta cheese

5 date deglet noor or 3 large medjool dates, chopped

dash of salt

Bacon and Bleu Stuffed Squash


Pre-heat oven to 400.

Line baking sheet with tin foil.

Cut squash in half and scoop out seeds.

Drizzle coconut oil and maple syrup on squash.

Sprinkle with cheese and dates. I filled the “hole” with cheese and dates and carefully sprinkled rest of squash.

Bake for 45-60 minutes, or until the cheeses are browned and the flesh of the squash is tender and starts to caramelize.

Sprinkle chopped bacon on top about 10 minutes before removing from oven.

Take out of oven and enjoy.


I bought a large one thinking I’d be able to finish a whole side and it was to much for me to eat. So if you feel like sharing with some one you could. Or you could save some for leftovers. So my suggestion is if you are super hungry then buy a big one otherwise try to find a smaller one.
