Juicy Pork Chops and Braised Red Cabbage

What you’ll need:

3 pork chops, thick cut bone in

salt and pepper, to taste

3 tbs butter

2 tbs olive oil

cast iron skillet

Heat skillet on medium high and  place oil and butter in pan. Once butter is bubbling, salt and pepper one side of chops and place seasoned side down in pan. Cook for 8 minutes. Flip and cook for another 6 minutes. Remove, plate and cover with tin foil. 

Meanwhile saute 1 sweet onion until caramelized to your liking.

Braised Red Cabbage: 

1 large or medium head of red cabbage, chopped up 

1 pinch of salt, or to taste

3-4 tbls balsamic vinegar

1 cup of water

2 tbs coconut oil or olive oil

Heat oil in pan then place water, salt, vinegar and cabbage in pan. Cook until cabbage is starting to wilt. Place a lid on and cook until cabbage becomes soft and there is no liquid left the cabbage should be mostly translucent.  

Plate cabbage and caramelized onions followed by pork chop. Enjoy 🙂
