Stuffed Acorn Squash

Stuffed Acorn Squash The best part of winter time is all of the winter squash! I love squash, you can do just about anything with it. It’s even better when you go into the store and get to see an array of all the different types of squash available this time of year. For this recipe you will  need:

Stuffed Acorn Squash

acorn squash

polish kielbasa; diced

salt and pepper

1-2 cloves garlic; chopped

8-10 small potatoes; diced

2 tbs olive oil

1/2 small sweet onion; chopped

medium saute pan

baking pan

tin foil

 Stuffed Acorn Squash

Directions/Prep:Stuffed Acorn Squash

Dice up kielbasa, onions and potatoes, set aside.

Pre-heat oven to 400 degrees, then halve your acorn squash and scoop out seeds.

Bake acorn squash for 35-45 minutes depending on size of squash.


Add diced potatoes of choice to a baking sheet and drizzle olive oil over them and bake with squash, checking halfway through to toss potatoes around to brown all sides.

When there is 15 minutes left on the timer start sauteing your kielbasa, garlic, and onions.

Once everything is done, add kielbasa and onion mixture to potatoes and spoon into squash, and enjoy!

  1. I don’t know if you have ever looked at the calories or carb count for a milkshake but they are astronomical. I made my own and within healthier range of calories/carbs. I put a scoop of chocolate royale slim fast in my nutribullet. I added crushed ice,almond milk, 5 dark cherries, 1 kale leaf, flax seeds, 1/5 banana, water. It was thick like a milkshake with the chocolate/cherry mix and so good. I tried adding some cooled coffee one day with it instead of water and it was good too. So when I feel like poor me I can’t have a milkshake I make one of these.
